Malyce Meelis-Koolman, born and raised in Aruba, is the proud owner of Dulce Aruba.
Guided by her favorite quote, “Do what you love and love what you do,” Malyce is passionate about creating sweets that bring joy to her clients. Her journey into the world of sweets began as a hobby, but in 2019, it blossomed into a small business that celebrates her love for baking and her desire to make others happy. Dulce Aruba, named after the first sweets she learned to make—dulce de leche—also captures the essence of what it means to create something sweet, both literally and emotionally.
Malyce's love for sweets began at an early age, when she would make desserts alongside her mother. Her mom, an avid baker, was her greatest inspiration and instilled in her a passion for creating delicious treats. Over the years, this passion only grew stronger, eventually leading Malyce to establish Dulce Aruba. For her, it’s not just about making sweets but about crafting memories and continuing a tradition that is deeply rooted in Aruban culture.
In Aruba, sweets hold a special place in the hearts of locals. Traditional sweets are an integral part of Aruban celebrations—whether it’s a birthday, a holiday, or any other festive occasion, sweets are always present. These treats symbolize the joy and love shared among family and friends. Some of Malyce's recipes, such as cocada (coconut sweets), dushi di dadel (date sweets), and tentalaria di pinda (peanut sweets), have been passed down through generations, originating from her grandmother. Other beloved sweets she creates include sunchi (meringue), cuki lerchi (Aruban cookies), and the classic dulce de leche. While many of these desserts have ties to other cultures, Aruba’s unique culinary traditions have given them a distinct flavor, texture, and style, making them truly Aruban.
Malyce's passion for sweets doesn't stop at tradition. She is always looking for ways to innovate and expand her skills. Her creativity extends to not only how she makes her sweets but also how she decorates and presents them. Each year, she challenges herself to learn something new. Recently, she trained with a French pastry chef to master the art of macarons, putting her own Aruban twist on the delicate treat. This blend of tradition and innovation keeps her passion alive and ensures her customers are always excited to try something new.
